Kale: One of Nature’s superfoods – it grows easily and well in our early spring Ontario climate and is very good for your body. That’s all well and good, but how do we get our families to eat it?

Check out some ideas for transforming ‘Eww, kale!’ into ‘Yay! Kale!’ for everyone at the dinner table:

Kale Wraps

Kale Wraps: why not replace regular iceburg lettuce with kale? Wash kale, remove stems and thinly slice leaves.
Our kids virtually live on wraps, so it’s not a hard sell to slip some kale into their diets this way.

Kale & Mushroom Bowl

If you are new to eating kale, you might find that cooking it gives a much more palatable texture (Although I, for one, love the crunchiness of kale, and when we do cook it, it gets put in last to maintain that crunch).

Our shiitake mushrooms will be ready for eating in spring as well!

Kale & Potato Soup

By the time we start harvesting veggies, we hope spring will have sprung and the warm weather will have arrived.

Kale Chips

A tried and true favorite! The kids (age 2 and 4) eat these up:) I really can’t make them fast enough.

And they are easy to make – only three ingredients. Please give this a whirl…….you really should.

Pigs run faster than we thought.
Pigs jump higher than we thought.
Pigs are MUCH smarter than we had originally imagined.
Pigs eat a lot more than we had originally budgeted for

BUT, at the end of the day, they are very interesting animals, PLUS they make a very tasty addition to the dinner table.

Our pigs are raised outdoors, in a wooded area where they have lots of room to roam. We never practice confinement with our pigs (which means that neither sow nor piglets have ever know a concrete floor, iron bars, or lack of sunshine).

We do not use anitbiotics or hormones in or on our animals.
Our pigs are fed a diet of grains and veggies (with a large amount of the veggies coming from a food recycling program with local restaurants and other food establishments).

Nathan and I feel confident that our pigs led a happy life and we are pleased to offer you this premium pork product.

Posed by a few different people was the question ‘…why don’t I get much juice…?’

Well, although we have the growing part figured out, the juicing aspect is still a mystery to me.

Here is what I learned after doing some research and talking to others who were more knowledgeable than me:

It’s all in the type of juicer!

Regular juicers are meant for extracting juice from things like carrots, apples, celery.

To get the maximum output (and most nutritional value) you’ll need to make sure you have a juicer that is specifically for wheatgrass.

A manual wheatgrass juicer acts as a press that slowly extracts out the wheatgrass juice from each blade of grass as you turn the hand crank.

There are also electric wheatgrass juicers on the marketplace.

Locally, I have heard that the downtown Midland healthfood store may be able to help those looking to get wheatgrass-specific juicing machines.

So………have we all made the mental link between CAFOs and these major contamination issues….which arise again and again and again? Right?

When you buy meat (in this case beef and beef products) from sources which buy in bulk from a p

rocessor, you are supporting the horrible feed lot living conditions for these animals (crowded in dusty, dirty pens, standing up to their knees in the excrement of their tens of thousands of neighbors).When you buy meat from these sources you are supporting a massive engine which churns out thousands of pounds of meat in one day (a pound of ground beef bought at the grocery store may have meat from as many as 1000 different cows in one package).

This meat is sold at McDonalds (and other fast food joints), Superstore (and ALL other grocery stores) and Costco (and other discount wholesalers). When you buy a McCains steak & cheese pizza, this is the meat you are eating.

When you eat a burger at Kelsey’s or Boston Pizza (and all other sit-down restaurants) you are eating meat from these sources.

I eat meat everyday. Don’t get me wrong.
I also don’t have a limited disposable income to spend on food (my NOA from last year would make most of you weep or cry to the heavens or rage uncontrollably).

It is the system of producing cheap food for the masses that is the problem.

Awareness. Please.
